Healthy Winter Stew Recipe

As winter is drawing near, my need for warming and nourishing foods has increased ten-fold!

Also having a busy schedule (like most people) means that I need meals that are easy to prepare and that I can make a big batch of to keep me going for a few days. I also like to freeze portions for those days when you don’t have time to throw something together.

This stew recipe certainly ticks all those boxes – it’s easy to make, you can stick it in the slow cooker whilst you’re at work and it will feed the whole family.

If you don’t have a slow cooker, then don’t stress as you can still make it but you will just need to fry the onion, garlic and chicken first before adding it to the pot with the other ingredients.


  • 4 carrots, cut into chunks
  • 2 parsnips, cut into chunks
  • 2 leeks, cut into slices
  • 2 onions, chopped finely
  • 4 garlic cloves, chopped finely
  • 1 large potato, cut into chunks
  • 1.4 litres of chicken stock
  • 1 tbsp fresh thyme leaf or fresh oregano
  • 2 tsp fresh rosemary leaves
  • 2-3 chicken breasts
  • 1 tbsp of chickpea flour (or any other type of flour)
  • Sea salt and pepper to season


  • Add all the ingredients to the slow cooker (except for the chicken stock and flour).
  • Add the chicken stock and mix through ingredients with a wooden spoon.
  • Make sure all all the veggies and chicken are well covered with stock – if you need more liquid, add some water.
  • Mix the flour with a small amount of water until well combined. Add to slow cooker.
  • Cook for approx. 8 hours at medium setting.
