Healthy Stuffed Mushrooms

I just love mushrooms, especially Portobello mushrooms because they are extra tasty and chunky!

Mushrooms are also packed full of goodness – they provide a source of vegetarian protein, they have immune-stimulating properties and contain high amounts of the minerals selenium and copper, plus vitamins B3 and B6.

Here’s my favourite Stuffed Mushroom Recipe

Ingredients

  • 4 large Portobello mushrooms
  • 2 cloves garlic, minced
  • 1/2 cup red, yellow and orange peppers, chopped small
  • 1 finely chopped onion
  • 1 cup chopped baby spinach
  • 4 diced tomatoes
  • 4-5 broccoli buds
  • 1 handful of fresh spinach
  • 1 tbsp grapeseed oil
  • 1 tsp of turmeric
  • Sea salt and pepper to taste
  • Fresh coriander to garnish

Method

  • Mince garlic and chop the peppers, onion, tomatoes, broccoli and spinach.
  • Cut off mushroom stems, chop up and add to sauté mix.
  • Lightly sauté the mix of vegetables in a pan with the grapeseed oil.
  • Add the turmeric and season with some salt and pepper.
  • With a spoon, carefully scrape out the gills (the black webby stuff) from the mushrooms.
  • Clean mushrooms carefully, with some tissue and water.
  • Put the whole mushrooms (hollow side up) in a baking tray and bake for 5 mins.
  • Fill mushrooms with sautéed vegetables and garnish with some coriander.
