Creamy Raw Beetroot Dip

Dips make such a great appetizer and are fantastic for entertaining. Here is a healthy, raw beetroot dip that your guests will simply love and it’s also great for cardiovascular function!

Beetroot is an amazing superfood that is packed full of antioxidants, folic acid, iron, vitamin C and betaine which is a nutrient that helps reduce inflammation.

Walnuts are high in vitamin E and omega 3 – both of which help to reduce blood pressure and cholesterol levels, improve blood vessel tone & prevent clotting.

Garlic is a wonderful food for the heart – it can reduce cholesterol and triglyceride levels, protect blood vessels from inflammation and free radical damage, and reduce the overall risk of heart disease.

Creamy Raw Beetroot Dip

Ingredients

  • 1 large beetroot
  • ½ cup walnuts
  • Juice of ½ lemon
  • 1 garlic clove, peeled
  • 2 tbsp olive oil
  • Water – as needed
  • Sea salt to taste
  • Parsley to garnish

Method

  • Peel the beetroot and roughly chop into large cubes.
  • Place beetroot, walnuts, lemon juice, garlic and olive oil in a blender and combine.
  • Slowly add some water (as needed) to achieve a smooth texture.
  • Add salt to taste and garnish with a sprig of parsley.
