Coconut Chia Pudding Recipe

Looking for a healthy dessert that is quick and easy to make – check out my coconut chia pudding recipe!

Chia seeds are an ancient superfood native to South America that contain high amounts of antioxidants, omega 3 fats and the minerals calcium and iron. They provide a great source of protein, essential amino acids and fibre – they also aid in blood glucose and cholesterol metabolism.


  • 2 cups of coconut milk
  • 1/2 cup chia seeds
  • 1/2 cup honey, maple syrup or rice malt syrup
  • 2 tbsp shredded coconut
  • 1 vanilla pod ground
  • Berries (or other fruit) to garnish. 


  • Place all the ingredients in a bowl and mix together until they are well combined.
  • Measure out the mixture into glass jars or ramekins. Garnish with fruit. 
  • Refrigerate for 3-4 hours before serving.

This recipe makes approx. 4 serves.
